| Butteroil substitute (BOS) | 40 g |
Step 1: Using a hook, mix Group 1 to a smooth dough at 30–31 °C.
Step 2: Add Group 2 and mix until developed.
Step 3: Rest 5–10 minutes, scale, rest 5–10 minutes and mould.
Step 4: Prove to 90–100% and bake at 200 °C.
Temperature: 200 °C
